CHICKEN ORIENTAL SALAD
Salad
3 to 4 chicken breasts
1 small head of cabbage
2 pkgs. chicken-flavored Ramen noodles (uncooked)
2 (3 oz. each) pkgs. slivered almonds
2 to 3 T. sesame seeds
Dressing
½ c. vegetable oil
½ c. white vinegar
1 tsp. salt
1 tsp. pepper
3 T sugar
2 chicken-flavored packets (from Ramen pkgs.)

Boil chicken in salted water. Chop cabbage into thin slices. Crunch noodles while still in bags, then add noodles to cabbage. Brown almonds and sesame seeds in olive oil and add to cabbage along with cubed chicken. Whisk together oil, vinegar, sugar, seasoning packets, and salt and pepper. Pour over salad and lightly toss.

5-CUP SALAD
1 c. mini marshmallows
1 c. pineapple chunks (drained well)
1 c. mandarin oranges
1 c. coconut
1 c. sour cream

Combine ingredients and chill for 4 hours before serving. Makes 4 to 6 servings.

MANDARIN ORANGE SPINACH SALAD
Dressing
½ c. vegetable oil
1/3 c. sugar
1/3 c. white vinegar
2 T. minced fresh parsley
¾ tsp. salt
Salad
¾ c. slivered almonds
4-1/2 tsp. sugar
7 c. torn romaine
7 c. torn spinach
1-1/2 c. sliced celery
1-1/2 c. sliced green onions
3 cans (11 oz. each) mandarin oranges, drained

In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated. Spread on foil to cool completely. In a large salad bowl, combine the romaine, spinach, celery, and onions. Add oranges and sugared almonds; toss gently. Shake dressing; drizzle over salad and toss to coat. Makes 24 servings.

MARINATED FRUIT SALAD
2 c. cubed cantaloupe
2 c. cubed honeydew
2 medium kiwifruit, peeled, halved and sliced
¼ c. undiluted juice concentrate – orange, peach, mango, or orange-pineapple flavor

In a bowl, combine the cantaloupe, honeydew, and kiwi. Add somewhat-thawed juice concentrate; toss to coat. Refrigerate for at least 2 hours, stirring occasionally. Serve with a slotted spoon. Makes 6 to 8 servings.

RASPBERRY JELL-O PRETZEL SALAD
Crust
2 c. crushed pretzels
¾ c. melted butter
2 T. sugar

Mix together and press into bottom of 9x13 pan. Bake at 400 degrees for 7 minutes. Cool completely.
Cream Cheese Layer
1 (8 oz.) pkg. cream cheese, softened
1 c. powdered sugar
1 (8 oz.) container of whipped topping

Beat together cream cheese and sugar, then fold in whipped topping. Spread on top of cooled pretzel crust.
Jell-O Layer
1 (6 oz.) pkg. raspberry Jell-O
3 c. boiling water
1 small pkg. frozen raspberries
1 small can crushed pineapple (do not drain)

Dissolve Jell-O in hot water, then add frozen raspberries and crushed pineapple. Let set in fridge until syrupy, but not completely set. Spread over cream cheese mixture and let Jell-O salad set in fridge before serving.

CHICKEN FRUIT SALAD and SANDWICHES
2 to 4 c. cooked chicken, cubed
2 T. orange juice
2 T. vinegar
1 tsp. salt
3 c. cooked rice
½ c. small grapes (red)
1-1/2 c. chopped celery
1 c. pineapple tidbits, drained
1 c. mandarin oranges, drained and cut in half
1 c. toasted almonds
1-1/2 c. mayonnaise

Combine chicken, vinegar and salt. Let stand while preparing rest of the ingredients. Gently toss together all ingredients, and serve on crisp lettuce. Or for sandwiches, serve on croissant rolls.

5 regular Snickers candy bars, refrigerated, cut up into small pieces
5 Granny Smith apples, cut up into small pieces
1 carton whipped topping

Mix candy pieces, apples and whipped topping together. Delicious and easy!
